Restaurants
Dining is not a singular experience, but rather a multi-sensory adventure. While locally-sourced ingredients are a staple at every restaurant and bar, the offerings are a diverse mix of international flavors. Our restaurants vary from elevated fine dining to casual beachside buffet.

Aquamadre
Mexican
Regional Mexican fare in an interactive, experiential setting, with a focus on ingredients sourced from Nayarit and nearby Jalisco, and a menu of both familiar and hyper-local dishes prepared in an open show kitchen—a bright, lively space designed in natural materials and cool neutrals, accented by Vallarta’s deep blues and rich violets.

Lia
Southern Italian
At Lia, every meal begins with our signature Seasonal Spritz cart, offered tableside for guests to customize their cocktail. Southern Italian lunch and dinner menus feature locally sourced, fresh-caught fish and seafood from the Pacific Coast, Neapolitan-style pizza prepared in wood-burning ovens, housemade pastas, and a wine and espresso bar—all in a fresh, light, laid-back setting.

Kobo
japanese
A diverse selection of Japanese cuisine, featuring a ramen bar, sushi counter, yakitori grill, and cocktail bar inspired by an extensive selection of sake. KOBO also offers an à la carte menu featuring dishes designed for sharing—shabu shabu, sukiyaki, and barbecue grilled over hot stone, which guests are invited to prepare at their tables. KOBO’s bar menu is centered around hot and cold sake and soju, a curated selection of Japanese whiskies, and additional craft cocktails.

Inez
Cafe
Our translation of European café culture: Café Inez is a gathering place and meeting point serving fresh juices, coffee, tea and housemade baked goods in the morning, with sandwiches, paninis and salads for light lunch and dinner.

Coquita
lounge Bar
A bright, lively, upbeat bar and lounge inflected with the colors and creativity of Vallarta’s most exciting emerging artists, with cocktails inspired by great works of art, nightly live music, and a menu of small plates.
